I really like using buttermilk in baking. It makes baked goods taste and feel soft and nice. Using it in this loaf is the same, making the crumb soft and tender.

TO MAKE THE CINNAMON SUGAR MIXTURE (FILLING AND TOPPING)

  • 68g or ⅓ cup of white granulated sugar
  • 1 ½ teaspoons of ground cinnamon

TO MAKE THE CINNAMON BUTTERMILK LOAF

Ingredients for Cinnamon Buttermilk Loaf

  • 115g of softened butter in half a cup
  • 1 cup (200g) of white granulated sugar
  • 1 egg
  • 1 cup (250ml) of buttermilk (SEE NOTE 1)
  • 2 cups (240g) of all-purpose or cake flour
  • 1 teaspoon of baking soda or bicarbonate of soda

How to do it

FOR THE CINNAMON SUGAR MIXTURE (TOPPING AND FILLING)

Put sugar and ground cinnamon in a bowl and mix them together.

TO MAKE THE CINNAMON BUTTERMILK LOAF

  1. Put parchment or baking paper on the bottom of a 22 x 13 cm / 9 x 5″ loaf pan and grease it.
  2. Put the sugar and butter in a big bowl and mix them together until they are light and creamy.
  3. Beat in the egg and buttermilk until they are well mixed.
  4. Add the flour and baking soda and mix well.

  1. Put half of the batter into the prepared loaf tin and sprinkle half of the cinnamon sugar over it.
  2. Put the rest of the batter on top and sprinkle the top with the rest of the cinnamon sugar.
  3. Put in an oven that has been preheated to 350°F / 180°C and bake for 40 to 50 minutes, or until a skewer comes out clean.
  4. Take it out of the oven and let it cool for at least 10 minutes before taking it out of the loaf pan.

It’s easy to make and delicious, and you don’t even need frosting. Just prepare, bake, and eat.

Notes on the recipe

  1. If you don’t have buttermilk, you can use one of the following instead: Mix 1 tablespoon of lemon juice or vinegar into 1 cup of milk. Let it sit for 5 minutes before using it in the recipe, or use 1 cup of plain, unflavored yogurt.

Keeping

For three to four days at room temperature. To keep it from drying out, just make sure it’s well wrapped or kept in a container that doesn’t let air in.

In the freezer, it can last for up to three months. Wrap it in a few layers of plastic wrap and then again in aluminum foil after it has cooled down completely.

To thaw: When you’re ready to eat a few more slices, take the cake out of the freezer and let it sit at room temperature while still wrapped.
