Broccoli Chicken Fritters

These Broccoli Chicken Fritters are full of flavor and very soft and juicy. A simple chicken meal that just takes 30 minutes to cook. They are easy to make keto-friendly and are great for a crowd as an appetizer or a light meal or dinner.
You will definitely want to add this quick chicken fritters dish to your weekly menu! They are very juicy, simple to make, and great for topping salads. They are very great for my kids.
You can serve these as an appetizer for your guests or make them for the kids as a light lunch. Broccoli is used to boost fiber, although cauliflower can easily be used instead. You may also use almond flour instead of breadcrumbs to make it keto-friendly.
Things you need

- Ground chicken or chicken breasts
- Panko bread crumbs
- Broccoli cut up very small
- Eggs
- Dill that has been chopped
- Onion powder, garlic powder, salt, and pepper are some of the seasonings.
- Avocado oil is a fantastic oil for frying.
- ◯ 1 1/2 pound Chicken breasts , or ground chicken
- ◯ 1 cup Panko breadcrumbs
- ◯ 1 cup finely chopped broccoli
- ◯ 2 Eggs
- ◯ 2 tablespoons Chopped dill
- ◯ 1/2 teaspoon Onion powder
- ◯ 1/2 teaspoon Garlic powder
- ◯ 1/2 teaspoon Salt
- ◯ 1/4 teaspoon Pepper
- ◯ 2 teaspoons Oil , for frying
How to cook chicken fritters

Cut the chicken into pieces and put them in a food processor. Pulse for roughly 1 minute for finely chopped chunks or less for coarsely ground meat (be careful not to over-process the meat into a paste). The meat should hold together when pinched. Alternatively, you can use ground chicken.
Prepare and cook broccoli: Next, hold the broccoli with the stem facing up and using a sharp knife, carefully separate the florets, making downward slices from the stem. Bring a pot of water to boil over medium-high heat. When the water starts to boil, put the broccoli florets in a steam basket and put it on top of the heating water. Put a lid on the pot and let the broccoli steam for 2 to 3 minutes. Once the broccoli is done, remove from heat and allow it to cool. Chop it into small pieces.
Combine ingredients: Then, add the ground chicken, broccoli, bread crumbs, eggs, dill, and seasonings in a bowl.
Make the fritters: Next, using your clean hands, stir until all the ingredients are uniformly incorporated. Rub your hands with a touch of oil and pinch out a piece of beef mixture; form it into a tiny patty, about 1/2 inch thick.
Cook: Heat oil in a non-stick skillet over medium heat. Then cook the patties on each side until pleasantly golden brown, about 3-4 minutes per side. Finally, serve the fritters with your favorite dip and enjoy them!

- Place the ground chicken, broccoli,1 cup Panko breadcrumbs, 2 Eggs, 2 tablespoons Chopped dill, 1/2 teaspoon Onion powder, 1/2 teaspoon Garlic powder, 1/2 teaspoon Salt, and 1/4 teaspoon Pepper in a bowl.
- Mix everything together with your clean hands until it’s all mixed up well. Put some oil on your hands and pinch out a portion of the beef mixture. Then, form it into a little patty that is about 1/2 inch thick.
- In a nonstick skillet, heat 2 teaspoons of oil over medium heat.
- Cook the patties for 3 to 4 minutes on each side, or until they are a lovely golden brown.
- Enjoy the fritters with your favorite dip!

- Chicken: Use ground chicken or ground turkey
- Breadcrumbs: For a keto-friendly version you may sub this with 1/2 cup of almond flour ad 1/2 cup of parmesan cheese.
- Broccoli: Try cauliflower instead of broccoli
- Place leftovers in a container and store in the fridge for up to 5 days. Reheat in the microwave when ready to eat. Also, you can freeze for up to 3 months.
