You can create this garlic butter steak pieces and potatoes meal in less than 20 minutes. The steak bites are really soft, and the potatoes get a gorgeous golden brown right in the pan.

I love steak. But I don’t prepare steak very often because it’s a little more work. The answer? Bites of steak!

I made my Healthy Beef and Broccoli Stir Fry over and over again, so I wanted to try other ways to cook steak in the pan. It turns out that cooking delicious, succulent steak bites in just a few minutes is quite easy! I love making steak this way now since it’s quick and the searing is foolproof.

The ingredients are simple, but the garlic and butter make this meal taste amazing. If you can’t handle lactose, use ghee instead of butter to make a meal that fits the paleo diet. I know you’re going to enjoy this recipe for garlic butter steak bits with potatoes as much as I do. It’s a one-pan dish that we eat every weeknight, and the kids love it!

You just need a few simple things to make this steak bites and potatoes dish. The ingredients are fresh and don’t have any gluten in them:

  • ¼ cup of ghee or butter, split
  • 1 tablespoon olive oil
  • 1 lb yukon gold potatoes, sliced into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes
  • Parsley

Instructions

    1. Prep: Heat a big cast iron skillet over medium heat. Put the olive oil and two tablespoons of ghee in the pan.
    2. Once the ghee is melted, add the potatoes to the pan and sprinkle the garlic, thyme, oregano, salt, and pepper over them. Cook for 2-3 minutes before stirring the potatoes. Stir the potatoes and heat until they are golden brown and fork tender, about 8-10 minutes. (Note: this will take longer if the potatoes are packed in the pan, or your potato chunks are larger.) Stir constantly, about every 1-2 minutes, to prevent sticking. Remove the potatoes and the browned parts from the pan and set aside.

  1. To sear the steak, turn the heat up to medium-high and add the last two tablespoons of ghee to the pan. Add the steak pieces and a little salt and pepper once the butter has melted. Before stirring the steak pieces, let them cook for at least 2 minutes. You want to make sure they get a decent sear. Stir and cook for another 1 to 2 minutes, or until the food is golden brown.
  2. Put the potatoes back in the pan and swirl to mix. Add extra salt and pepper to taste. Add finely chopped parsley on top. Serve and have fun!

Tips and Variations

You can use other little potato varieties in this dish, including yellow, red, or fingerling potatoes. Make sure the potatoes are of the same size and cut them small. It will help them fry up quickly. A cast iron pan is great for getting the potatoes crisp and the meat browned. Fight the impulse to disrupt the meat. Let the steak pieces sear and grow brown before stirring. Use a splatter screen when searing the meat to keep the mess to a minimum.

You can use various little types of potatoes in this recipe, like yellow, red, or fingerling potatoes. Cut the potatoes small and even! It will help them fry up quickly. Fight the impulse to stir the meat to early. Let them sear before stirring.

You don’t have Yukon gold potatoes? You can use any kind of little potato, such yellow, red, or fingerling potatoes. This recipe will work with any tender steak, such as sirloin, strip, beef tenderloin, or ribeye. You can use any other dry herbs instead of thyme or oregano, such as rosemary, basil, or parsley.

Storage & Reheating

TO STORE: Store any leftovers in the fridge in an airtight storage container for up to 5 days.

TO FREEZE: To freeze, let the mixture come to room temperature, then place the steak bits and potatoes in an airtight storage container or freezer safe zip-top storage bag. You can keep it in the freezer for up to three months. Before reheating, let it thaw in the fridge.

TO REHEAT: For the greatest texture, I recommend reheating in the skillet with a little extra ghee poured over medium heat until warm. You may also reheat it in the microwave in 15-20 second intervals till warm.
