Que, my brownie balls that don’t need to be baked. They taste and feel like brownie batter, yet they’re easy to grab and go. It has a small list of tasty pantry essentials, so it’s a treat I can prepare on the fly with little effort and a lot of reward.

Three main elements go into it

You only need cocoa powder, almond butter, and a little bit of maple syrup.

- ◯ Butter made from almonds. The main part. Use almond butter that is smooth and drippy and has no additional sugar. If you have a nut allergy, use tahini or sunflower seed butter instead.
- ◯ Syrup from maple trees. To make it sweet. You can also use agave nectar or honey.
- ◯ Cocoa powder. I used cocoa powder that was 100% unsweetened and Dutch-processed. Make sure to sift it well so that there are no lumps. I don’t think cocoa powder is a good idea because it can be really bitter.
- ◯ Small chocolate chips. Not required, but really helpful!
Step-by-step making process

1. Mix, mix, mix!
Put all the ingredients in a big bowl and mix them together until they are smooth.
2. Shape and cool.
With your hands, mold the mixture into balls that are easy to eat. Put them on a tray lined with parchment paper and put them in the fridge or freezer until they are solid.

Use a processor for food. Sometimes, I can’t combine homemade almond butter by hand since it’s too thick. In those cases, I use a food processor or blender.
Change the thickness. Add a little chocolate powder if the batter is too sticky. If it’s too thick, you can also add water or almond milk to make it thinner.
Wet your hands a little. So the mix doesn’t get all over the place. Or even better, use a cookie scoop!
Changes
- Change the nut butter. For additional chocolate flavor, use peanut butter or healthy Nutella.
- Chocolate them. Put chocolate in a bowl that can go in the microwave, melt it, dip the thoroughly chilled bites in the melted chocolate, and put them in the fridge to harden.
- Sweet and salty. Before putting the bites in the fridge, sprinkle them with coarse sea salt.
- Nuts. Add chopped pecans or walnuts for extra crunch.
How to store
Put leftover bites in an airtight jar in the fridge for up to a month.
Put them in a ziplock bag and freeze them for up to six months. Let them sit in the fridge for a little while to thaw.
