The finest summer treat ever is this Fresh Strawberry Crisp! A buttery and crumbly oat topping goes on top of fresh, juicy strawberries. With a huge scoop of vanilla ice cream on top, it’s the best dessert ever!

My kids are eating me out of house and home right now since it’s summer. I feel like I live at H-E-B or in their curbside pickup parking areas. Is there anyone else who feels this way?

When I’m not at H-E-B, I’m probably at Sam’s doing the same thing. We go through so many gallons of milk a week now that the baby is drinking ordinary milk. It’s crazy! My eight-year-old can eat a whole casserole dish worth of cereal every morning and still be hungry!

When I go to Sam’s, I generally get one of those big boxes of strawberries. The strawberries are excellent and in season, and the price is just right. My kids will eat any kind of berries, but they usually only want to eat them fresh. But this tasty Fresh Strawberry Crisp is the one dessert that you can’t resist in the summer.

Yes, yes. It is hard not to get right into the bubbly pan as soon as it comes out of the oven! But letting it cool down a little and adding a scoop of vanilla ice cream is the best thing ever, really!

I want to thank my hubby for helping me make this Strawberry Crisp dish after we went berry picking with the kids in May. We brought home two big baskets of strawberries, blackberries, and two zucchinis after spending a scorching day in the fields. For dinner, I made zucchini lasagna, and he played about with the filling for the strawberry crisp.

The warm, delicious smell of strawberries filled the room when this came out of the oven. We absolutely stole some out of the pan when the kids were still outside playing. It has really, really worked well so far! The only problem is where to place the items when I take the IP out to use it. This Fresh Strawberry Crisp is the ideal treat for summer! Fresh, luscious strawberries are covered with a buttery and crumbly oat topping. With a generous scoop of vanilla ice cream on top, this dessert is to die for!

Time to cook: 35 minutes
Total time: 45 minutes

Filling

  • 1/4 cup of granulated white sugar
  • 5 heaping cups of fresh strawberries, hulled and cut into quarters
  • 1 teaspoon of vanilla extract
  • 3 tablespoons of cornstarch

On top

  • 1 cup all purpose flour
  • 3/4 cup old fashioned oats
  • 2/3 cup granulated white sugar
  • 2/3 cup packed brown sugar
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/2 cup (1 stick) butter, melted

Instructions

  1. Preheat oven to 350 degrees. Grease a deep dish pie plate or big baking dish with butter or cooking spray and set aside.
  2. Combine the chopped strawberries and sugar in a large bowl and mix until the strawberries fully absorb the sugar. Add in the cornstarch and vanilla essence and stir until all of the strawberries are uniformly covered. Pour into the prepared baking dish.

  1. In a separate medium size bowl, add the flour, oats, brown sugar, granulated sugar, salt, and cinnamon. Pour in the melted butter and whisk well until completely covered and crumbly. Sprinkle the crumb mixture evenly over the top of the strawberries.
  2. Bake in the preheated oven for 35-40 minutes until fruit is bubbling and topping is golden brown. Let it cool down a bit before serving. Serve warm with vanilla ice cream over top. Enjoy!
