Crock Pot Beef Stew

On a cold day, nothing sounds nicer to me than a warm bowl of Crock Pot Beef Stew. This beef stew in a crock pot has big chunks of beef and vegetables that have been cooking in the best gravy all day.
It’s the best lunch to make for your family on Sunday. I love to serve this with our favorite rolls, and I’ve been preparing it for years. It tastes very good! Everyone in my family loves this dish, including the kids. 🙂
Ingredients

- 2 packages (1 ounce each) of dried onion soup mix
- 1/2 teaspoon of paprika
- 2 pounds of beef stew meat or a boneless beef roast sliced into 1-inch pieces
- Five medium potatoes, peeled and cut into small pieces
- Two to three cups of young carrots
- One tiny yellow onion
- Two cans of cream of celery soup, each with 10 ounces
- One cup of ketchup (you can use tomato sauce instead if you don’t like ketchup)
Instructions
- Put the dry onion soup mix and paprika in a big plastic bag. Put the meat in the bag and shake it to coat it with the seasonings. (You might have to complete that procedure in two halves so that all the meat fits.)
- Once the meat is covered, put it in a greased 7-quart crock pot and spread it out evenly. Spread the diced potatoes, carrots, and onions equally over the meat.

- In a small bowl, mix the ketchup and cream of celery soup. Over the meat and vegetables, pour the mixture.
- Put the top on the crock pot. Cook on low heat for 7 to 8 hours, or until the meat is done and the vegetables are soft. Mix everything together and then serve.
