- 1/2 lemon, sliced for garnish (optional)

- 1/4 tsp ground black pepper
For the Parmesan Breading Mixture:
- 1 cup Parmesan cheese, grated
- 3 Tbsp all-purpose flour
Ingredients for Lemon Butter Sauce:

- 2 garlic cloves, minced
- 1/4 cup lemon juice
- 1/4 cup chicken broth
- Italian spice
- 1/4 tsp ground black pepper
Preparation Instructions
- Cut the chicken breasts in half lengthwise. Lightly beat with a meat mallet until even in thickness.
- In a bowl, whisk together the ingredients for the egg mixture. In another bowl, combine the ingredients for the parmesan mixture.
- Dip chicken into the egg mixture, then coat chicken in the parmesan mixture. Allow any excess ingredients to fall off from each bowl.

- In a big skillet, heat enough oil to cover the bottom of a skillet. Once hot, add the chicken and cook 4-5 minutes per side, or until crispy, golden and cooked through to 165˚F on an Instant Read Thermometer. Reduce the heat if chicken browns too rapidly.
- Meanwhile, in a separate skillet, heat butter and garlic, sauté until aromatic. Add the chicken stock, lemon juice, Italian spice, and pepper. Allow the sauce to simmer for around 2 minutes.
- Pour the sauce over the cooked chicken, tossing to coat. Garnish with lemon slices and freshly chopped parsley if preferred.
Additional Tips and FAQs
This easy lemon butter sauce only takes five minutes to make and will become a staple in your kitchen. The fresh lemon and butter make the sauce tangy, and the garlic brings all the tastes together. It’s very good!
If you want to make dinner faster, make the lemon sauce in a different pan or skillet while the chicken cooks. Once the chicken is done cooking, just pour the sauce on top. You could also just cook the chicken, take it out of the skillet (cover it to keep it warm), make the sauce in the same skillet, and then put the chicken back in.
NOTE: We enjoy the fresh and zesty lemon flavor in this dish. Cut back on the lemon juice if you don’t like the taste of lemons as much.
Can I do this ahead of time?
If you like to prep dinner in advance, slice the chicken and add it to the egg mixture, cover and refrigerate until you are ready for dinner. Allowing the chicken to marinade will result in a juicier and more tender chicken breast. After that, just follow the rest of the recipe steps.
Is it possible to make the Lemon Chicken without the Parmesan Crust?
Yes! If you want to be healthy, leave off the egg and parmesan mixtures. Cut the chicken breast into pieces and season them with salt, pepper, and Italian seasoning. Then, keep making the sauce.
What can you use instead of chicken thighs?
You can use chicken breast, thighs, or even tenderloins for this lemon chicken. You should follow the recipe exactly, but the cooking time will be different. The cook time will depend on the size of the thighs, you want the internal temperature to achieve 165F on an instant-read thermometer.
Adding Vegetables to the Chicken in Skillet:
Yes, you may definitely add vegetables to complete the dish. Asparagus, green beans, and zucchini will all go excellent with the lemon sauce and accent the chicken.
