Last Sunday, I thought of this recipe. I wanted cinnamon rolls while I was preparing protein crepes.I still wanted crepes, though, so I made crepes with cinnamon rolls. Or, I should say, cinnamon protein crepe rolls.

These cinnamon protein crepe rolls might be my all-time favorite breakfast. And when I say it, I mean it!

They really taste like dessert. These crepes are so bad for you that you won’t believe they’re healthful and high in protein.

Without using protein powder, the complete meal has 40 grams of protein.Curious how? My protein crepe recipe calls for egg whites and Greek yogurt instead of protein powder. You may obtain these two lean protein sources at any grocery shop.

You don’t even need protein powder to make these cinnamon protein crepe rolls. You can readily find all the components for the crepe rolls, filling, and topping at any grocery shop.

Ingredients for cinnamon protein crepe rolls

  • Flour made from oats (or any other flour)
  • Eggs and egg whites
  • Honey or maple syrup
  • Greek yogurt
  • granular sweetener (I use erythritol)
  • ground cinnamon
  • a little oil or butter

You only need Greek yogurt, a granular sweetener (I use erythritol), and ground cinnamon for the filling. You can use any other yogurt instead of the Greek yogurt if you want. It can even be dairy-free. Finally, the topping without sugar is just cinnamon and granular sweetener blended together.

  1. In a bowl, mix together the oat flour, maple syrup, egg, and egg whites to make the protein crepes. Mix everything together well until the mixture is smooth and free of lumps.
  2. Put a little oil or butter in a medium nonstick skillet or crepe pan and heat it over medium heat. Put 1/3 cup of crepes batter in the pan and turn the skillet in a circle to spread the batter out evenly. For 1 to 2 minutes, cook on medium heat, then flip.
  3. Mix Greek yogurt with a granular sweetener and ground cinnamon to produce the filling. When it’s done, sprinkle the cinnamon “sugar” filling over each crepe and roll it up.
  4. Lastly, mix the sweetener and cinnamon together to produce the topping. Put some on top of the protein crepe rolls and enjoy!

Follow these steps, and you’ll get the softest and tastiest protein crepe rolls ever!

  • Add roughly half a teaspoon of vanilla extract to the batter to make the protein crepes taste better.
  • Brick is very easy to use with egg whites.
  • If you mix the protein batter in a food processor, the crepes will be smooth.
  • Don’t cook the crepes too long if you want them to be tender. The longer you cook your crepes, the drier they will be.
  • If the Greek yogurt filling is too thick, add a little bit of your preferred milk to make it thinner.
